Last week, Elisha, 11, made this super awesome and deliciously healthy Baked Spinach & Pepperjack Chicken dish for our family. It was a big hit! If you're doing the Trim Healthy Mama plan, this is a great recipe for that. Just like we know the importance of feeding ourselves a healthy meal, our family also tries to make sure our pets are fed healthy meals too!

I was really excited to get this great sample package in the mail from Rachael Ray's new line of healthy cat food called, Nutrish. Real meat, like chicken or fish, is the main ingredient in these great blends. There's no artificial flavors or preservatives and you won't find the by-product garbage bits in these tasty (for cats!) recipes. Only simple, wholesome meals with a flavor your cat will naturally love.

I've featured our Flame Point Siamese cat, O'Neill, before. He's a good cat, and if he didn't shed so bad, I'd let him come in the house! Still, he's been an excellent outside guard cat. I've never seen a mouse and he's really great about fighting off possums and raccoons. See his weird upper lip? That's a raccoon battle scar! 

We've been feeding O'Neill the Salmon and Brown Rice dry blend all week and he totally loves it! Yesterday, he got to try some Sardine and Mackerel wet food and didn't stop 'til he'd eaten every good bite. We don't give him wet food very often, so it was a real treat for him. We like to eat healthy, wholesome foods also. That's why this spinach and cheese dish was such a dinnertime hit. With just three ingredients, Elisha put it together fast and I could feel confident feeding it to the family since I knew what went into it!

Baked Spinach & Pepperjack Chicken
4 boneless, skinless chicken breasts
1 pkg. frozen spinach
4 slices Pepper Jack cheese

Place chicken in a greased baking pan and top with spinach. Cover and bake at 350º for 30 minutes, or until chicken is cooked through. Remove from oven and lay cheese across the top. Bake another 10 minutes, until cheese is melted.

Back to school time always brings a change of routine around our house. As homeschoolers, we school all year round, but we always start the new schooling year in August. This means earlier bed times for the kids and longer movie nights for Jamie and I. I had been working on writing projects for several nights in a row, so last night I put it all aside to watch Duck Dynasty and enjoy some DiGiorno pizza strips with my husband.

I put the younger kids down to bed early, as they were sleepy and not feeling well, and Lynzie held down the fort while I ran out and grabbed some dipping strips at Walmart. I'd seen these in the pizza aisle before, but hadn't tried them. DiGiorno is one of our favorite brands of pizza, though, so I knew we'd enjoy them.

I came home to find the kids watching their favorite show, I Love Lucy. That's usually what they pick for their movie nights, but one can only take so much Ricky Ricardo. Then again, one can only take so much Willie Robertson... Still, it's quality marriage time, right? 

The dipping strips box gives microwave directions, but since we cook everything in the oven, I stuck them in at 375º. I put the dipping strip package in a pot of water and let it warm on the stove.

Before we headed to the back of the house to have our movie night, Lynzie took a picture of us. I'm glad the kids can see how important it is for Dad and I to have our date nights---even if we don't actually go anywhere!

It was nice to take a break from writing for the night and have a little pizza party with my husband. Although I've been hinting for weeks that I want to watch Jane Austen's, Emma, I'm happy to say I survived Uncle Si and enjoyed our DiGiorno, too!
