Need a soft and chewy gingerbread recipe? My mom and I came up with this delicious idea for soft gingerbread about 10 years ago while talking on the phone. I like to make these at Valentine's Day but they're delicious all year round!
Soft Gingerbread Cookies
1 c. butter
3/4 c. brown sugar
1/2 c. mollasses
2 eggs
1 Tb. cinnamon
1 Tb. ginger
1/2 tsp. salt
3/4 tsp. baking soda
3 1/2 c. flour
Mix first four ingredients together and then mix in remaining dry ingredients. Chill for a short time---about 30 minutes. Cut dough ball into fours, roll out each fourth on well floured surface, and cut with cookie cutters. Bake at 350 for 8 minutes or until just set. The key to keeping these soft is to not overbake them! Cool and spread with cream cheese frosting. ( I like to use store-bought cream cheese frosting (not whipped!) but you can surely make your own! )

I love soft cookies! I ate so much ginger when I was nursing because I heard that it made the milk come in faster. Not sure if it really worked or not - but I enjoyed the excuse to eat a lot of cookies. :) Thanks for linking up today!
