Apple Doodles
1 c. butter
1 1/2 c. sugar
2 eggs
1 Granny Smith apple, chopped
2 3/4 c. flour
1 tsp. baking soda
2 tsp. cream of tartar
1/4 tsp. salt
2 Tbsp. sugar mixed with 2 tsp. cinnamon for rolling
Preheat oven to 400. Mix sugar and butter until
well blended. Stir in eggs one at a time. In separate bowl, combine flour,
cream of tartar, soda and salt. Chop apple then add to wet mixture, along with
flour mixture, and mix until well blended. Roll dough into small balls and roll
in cinnamon mixture. Bake 8 - 10 minutes until slightly brown but still soft.
