Pumpkin Cupcakes with Cinnamon Sprinkle for the Homemaking Party



Thanks so much for joining me for the Homemaking Party! Here's a yummy fall recipe that I first debuted last spring! Now that it's actually pumpkin time, I thought I'd put it up again!  Hope you all are having a great week!

Pumpkin Cupcakes
6 eggs
3 c. sugar
3 c. pumpkin
1 1/2 c. oil
1 1/2 tsp. vanilla
3 1/4 c. flour
1 Tb. cinnamon
1 1/2 tsp. baking soda
1 1/2 tsp. salt

Mix eggs, sugar, pumpkin, oil, and vanilla.  Mix in dry ingredients and spoon into cupcake pans. Bake at 400 for 15-20 minutes or until done.  Frost with cream cheese frosting and sprinkle with cinnamon sugar

Cream Cheese Frosting
8 oz. softened cream cheese
1-2 cups powdered sugar
1/2 cup butter, softened
1/4 cup milk
1 tsp. vanilla

Mix cream cheese and butter until smooth. Add vanilla and then mix in powdered sugar and milk until it reaches the consistency you're wanting.
