Make Bake Create #31: Mac & Cheese Breakfast Casserole -- Big Family Recipe

I had the opportunity to play around with a new macaroni and cheese recipe this past week, and came up with this unique breakfast casserole. It was a hit with all nine of my kiddos so it's probably safe for you to give it a shot too!


Mac & Cheese Breakfast Casserole -- serves 12

10 c. prepared macaroni & cheese (I used Stouffer's frozen Party Size)
1 lb. ground breakfast sausage
1/2 c. chopped parsley
1/2 c. chopped pimientos
1/2 tsp. pepper
12 eggs
3/4 c. milk

Prepare macaroni & cheese according to package directions. Meanwhile, cook sausage in a large skillet. When it's cooked through, mix in cooked mac & cheese, parsley, pimientos, and pepper. Whisk eggs and milk together in separate bowl and then combine with the mix in your skillet. Pour everything into a greased 13x9 pan and bake at 400º for 50-60 minutes, or until egg mixture is set.
