Spaghetti Squash Casserole (No Pasta Spaghetti ~ Low Carb ~ Trim Healthy Mama Style)

Tonight I'm sharing my recipe for No Pasta Spaghetti, a delicious Spaghetti Squash Casserole that is low carb and great for the THM lifestyle! I have to admit that we've not been sticking to our diet very well this week, but once I'm done at #SoFabCon14 this weekend, I'll get back on track!

What is SoFabCon, you ask? It's the annual Social Fabric conference here in Bentonville, Arkansas. You've seen my posts tagged #cbias---those are Social Fabric campaigns. The hashtag, #cbias, stands for Collective Bias, which is the parent company of the social media part that is Social Fabric. Clear as mud? :)

Anyway, I'm spending the next few days soaking up tips and tricks and networking with some great bloggers from all over! I'm really looking forward to getting away and just focusing on making this blog an even better place to hang out!

Here's that yummy recipe (inspired by Mrs. Criddle's Kitchen) and thanks for stopping by the Homemaking Party!

Spaghetti Squash Casserole

1 large spaghetti squash
2 lbs. ground turkey
3 cloves minced garlic
1 diced zucchini
8 oz. sliced mushrooms
1 diced onion
29 oz. tomato sauce
1 TB. garlic powder
1 TB. onion powder
1 tsp. thyme or oregano
1 tsp. basil
salt & pepper
3 c. shredded mozzarella
1/2 c. dry parmesan cheese

Cut spaghetti squash in half and clean out inside. Prepare vegetables and set aside. Brown turkey and then add vegetables, cooking until medium tender. Add sauce and seasonings. You might want to add a little water if it seems to thick to safely simmer for awhile, but don't add too much as the vegetables will add liquid, as well. Simmer for an hour or so.

Meanwhile, place squash in a baking pan and add water to cover 1/4 inch of pan bottom. Cook at 400º for 30-40 minutes, until tender. Let it cool on the counter while your sauce finishes simmering. Scrape out squash insides and add to meat sauce. Stir everything together and pour half into a 13x9 dish. Sprinkle half the mozzarella on top and do the same for a second layer. Sprinkle the parmesan on top, cover with foil, and bake on 350º for 30 minutes.

Speed Up Your Shopping Trip with Walmart's Scan & Go App #shop #cbias

I am a member of the Collective Bias® Social Fabric® Community. This shop has been compensated as part of a social shopper amplification for Collective Bias and its advertiser. All opinions are honest and are my own.

Have you heard about Walmart's Scan & Go app? If not, you are going to love this! Our Walmart was swamped yesterday, as it is most weekends when people are out stocking their cupboards for the upcoming week. I'd already picked up my groceries a few days earlier, so I was just stopping by to grab a couple things I'd need for this cute wooden spool necklace I wanted to make. Thankfully, I'd just been introduced to the new Scan & Go app, and was able to speed past the long checkout lines. Since I spent less than a minute checking out my own purchases, I even helped move things along faster for those in the self-checkout area.

Pork Egg Roll Bowl ---Trim Healthy Mama Style--- Egg Roll in a Bowl

My family loves this surprisingly delicious Pork Egg Roll Bowl. This is not the sort of thing I normally enjoy, but my husband loves egg rolls so I thought I'd give it a try. I made it for dinner last night and it was delicious! The sesame oil really makes it great, but you can use any kind of oil if you're in a pinch. This recipe is modified from one I found on Pinterest, but the original author is unknown. So, if you are the creator of this great dish---speak up!!

Pork Egg Roll Bowl
(Serves our big family---but it's easy to half this one and do it all in one large skillet!)

1/4 c. sesame oil
2 lb. ground pork
2 heads cabbage, finely sliced
4 shredded carrots
1 chopped yellow onion
6 cloves garlic, minced
2 tsp. ground ginger or 1 tsp. mace
1/2 c. soy sauce (plus more to top, if desired)
Salt & pepper
3 green onions, diced

Cook the ground pork in a skillet until completely done. Add chopped yellow onion and oil, and cook until onions are cooked through and browning slightly.  In a separate little bowl, mix the garlic, ginger and soy sauce and add to pan. Stir well for just a few seconds and then remove from heat---but keep the heat on. Pour everything into a stock pot and add the cabbage and carrots. Return to burner and cook for a few minutes, stirring often. Remove from burner and add green onions and salt and pepper to taste.

However, once we all finished our portion, I was glad I hadn't made anything else. We were stuffed!

Messianic Prophecy --- Part Three

I've been talking about Messianic Prophecies over the last week as we come up on Easter---the greatest celebration for Christians! Today I'm going over a couple of prophecies in the Old Testament book of Zechariah. The prophet Zechariah wrote about Messiah approximately 500 years before the birth of Christ.

Making the Change to LED Power with GE Super Bright LED Lightbulbs #LEDSavings #shop #CollectiveBias

Spring is always a time of change. Whether it's just a change of season or a complete household overhaul, the New Year adage, "Out with the old, in with the new" doesn't seem to really apply until springtime. In our home, we're making a significant change in our energy consumption that will have a lasting impact, by changing to super bright LED lightbulbs. LED power is the way to go if you're wanting to save money, conserve energy, and cut down on garbage in the landfills.

ITBS Tests---SHHH...Testing!

Arkansas homeschoolers are required to take a standardized test once a year, beginning in third
grade. The Coller kids have been doing their annual testing the past few days. Today it's Elisha's turn to hang out with me all day in the bedroom and do his tests. Here's a shout out to all my kids who've been taking turns babysitting and being quiet and good while their siblings test. Two down, two to go!

Messianic Prophecy: Part Two

The Old Testament book of Isaiah is abundant with prophetic references---many of them pointing to Jesus Christ as the Messiah. Here are just a few of the proofs we have for Christ as God as prophesied by Isaiah, more than 600 years before Jesus walked the Earth!

The Virgin Birth/Jesus called Immanuel

Isaiah 7:14:"Therefore the Lord Himself will give you a sign: Behold a virgin will be with child and bear a son, and she will call His name Immanuel"

This is fulfilled in Matthew 1:20-23. Joseph was visited in a dream by an angel quoting the verse from Isaiah. His soon-to-be-wife was the prophesied virgin. "Immanuel" means "God with us". Like the names given for Messiah in Isaiah 9:6 (Wonderful Counselor, Prince of Peace, etc.), Jesus wasn't actually given the name "Immanuel" as his birth name. This is not what the passage means. Instead, it is saying that this is a term people will use to reference Jesus for the rest of eternity. People will say that Jesus is God in the flesh--God with us.

Messianic Prophecies -- Part One

It's almost Easter and I'm thinking about some of the Old Testament prophecies about Jesus that have been fulfilled in the New Testament. I found this series of posts that I put up several years ago so I thought I'd repost them. I imagine there's a lot of people who don't realize how many times the Old Testament talks about Messiah---or don't understand why that's even a big deal.

Pretty Birds for Pink Saturday

I love to decorate with birds. They're innocent and tender---which is probably why they remind me of my babies. I've got birds all over the house---and lots more in boxes that are slowly being unpacked! My mom sent me this blue bird jam jar shortly after I moved to Arkansas this past fall. We have these birds in our yard and I'd never seen them before coming here.

Bella Vista Museum Piece: What Pattern Is This?

This plate is in the Bella Vista, Arkansas museum and my mom thinks it's the same pattern her mom had when she was growing up. If anyone has a clue, please let me know! It's china and there are no markings on this one.
