I am so ready for summer to be over and fall to begin! A few years ago, Mom and I went to a Holiday bazaar and sampled some wonderful pumpkin fudge. I've been wanting to recreate it and finally did this past weekend!
Pumpkin Pie Fudge
3/4 c. butter
3 c. sugar
2/3 c. evaporated milk
1/2 c. pumpkin puree
1/2 c. pumpkin puree
2 T. corn syrup
1 tsp. cinnamon
1/2 tsp. each of cloves, nutmeg, ginger
12 oz. white chocolate chips
7 oz. marshmallow creme
1 tsp. vanilla
Line a 9x9 pan with foil and then butter it or spray with oil. Melt butter over medium heat. Remove from heat and stir in sugar, milk, corn syrup, pumpkin, and spices. Return to heat and stir constantly until mixture reaches 234 degrees on a candy thermometer. (It is very important that it reaches this temp.) Remove from heat and quickly stir in white chocolate chips, marshmallow creme, and vanilla. Stir until all ingredients are completely melted and combined. Pour into pan and let cool for several hours.
